Dill

An ANNUAL growing to 80cm with slender hollow stems and alternate, finely divided, softly delicate leaves. Small yellow flowers are born in umbels. Prefers a full sun position in a moist and well-drained soil. Edible leaves and seeds, it is also good as a companion plant to attract hoverflies and other predatory insects. Highly nutritious, it has a long history of medicinal use.
The leaves are eaten raw or cooked, very often paired with fish dishes. The seeds are used fresh or raw and used in spice mixes, baked goods, soups, stews etc.
Well known for its use in making dill vinegar and pickling cucumbers. A delicious tea is made from the leaves and seeds.
Seeds are commonly used as an effective remedy for digestive complaints, including griping, and flatulence in young children.
Chewing the seed improves bad breath. Dill is also a useful addition to cough, cold and flu remedies, and may help to increase the flow of milk in nursing mothers.
