Tomatillo – Green Husk Tomato

Tomatillo ‘Green Husk’ (Physalis ixocarpa) is a tender annual in the Solanaceae family. It prefers a warm, sunny site with fertile, free-draining soil. Growing to around 1–1.2 m tall and wide, it produces green, husked fruits with a tart, citrusy flavour. Grown mainly as a culinary plant for making salsa verde and sauces, it is also decorative and pollinator-attracting.

Tomatillo ‘Green Husk’ (Physalis ixocarpa) is the classic green-fruited tomatillo traditionally used in authentic Mexican and Central American cuisine. The round fruits grow inside papery husks that split open as they ripen, revealing firm, tangy flesh with a bright, citrusy flavour — perfect for green salsas (salsa verde), soups, and roasted sauces.

Plants are sprawling and vigorous, reaching about 1–1.2 m tall and wide. They thrive in full sun and fertile, well-drained soil, producing prolifically through late summer. Tomatillos are self-incompatible, so at least two plants are needed for cross-pollination and a good harvest.

Beyond their culinary value, tomatillos bring ornamental charm to the garden, with lantern-like husks and small yellow flowers marked with purple throats that attract bees. A rewarding and unusual crop for adventurous food growers.
