Capsicums are a frost and cold tender EVERGREEN PERENNIAL that is often grown as an annual, reaching a height of 1m. Prefers growing in a moist well-drained soil in full sun. Tabasco has white flowers that are followed by tapered fruits, around 4 cm long, that are initially pale yellowish-green and turn yellow and orange before ripening to bright red. Between 30,000 and 50,000 SHU in pungency, it is the only variety of chili pepper whose fruits are juicy; i.e., they are not dry on the inside.

Description

Used fresh as a condiment or roasted, dried, or canned. Peppers are often used fresh in salads, or cooked into pasta sauces, marinades, made into hot sauces etc. They are very high in vitamin C and other vitamins and minerals making them highly nutritive. It is mostly the very pungent cayenne peppers that are used medicinally.
